This weekend David was working overtime and even being Sunday I had to work as well. Gerald was here but with his eyes he can’t see to cook. I thought about asking Gerald to cook but we all know that wouldn’t happen.
In our home I try and make a Home Cooked Meal but this was one week I didn’t have time to make a meal and I didn’t have anything to put in the crockpot for dinner. Then I remembered something my grandmother Dorie used to say.
Sundays don’t always have to mean a big family dinner. Sometimes Sunday means going to church if you go, coming home, and wondering what is for dinner. For my family it was looking around the house and realizing that this is the week we’re finally going to start resetting things. There are rooms to organize, things to move, and plenty of projects waiting for us.
And sometimes, after all of that, the last thing anybody wants to do is spend hours in the kitchen. So this Sunday, we’re keeping lunch simple. We’re making a Sunday Sandwich Board and having a movie day. Since David will not be home before 7pm.
I don’t know about you but for me there is something nice about putting everything on the table and letting everyone make their own sandwich. We don’t have to agree on what belongs on a sandwich.
David can make his the way he likes it, Charlie can make his the way he likes it, and I can make mine the way I like mine. While Gerald does the same with his Sandwich. That’s one of the reasons I love an easy sandwich lunch.
There isn’t really a recipe to follow that contains a complicated list of ingredients. And there certainly isn’t a sink full of pots and pans afterward. Which is a Godsend when I ned to work. It’s just food, family and time together.
For our Sunday sandwich board, we’ll use whatever we have available. Think of it as a clean-out-the-refrigerator kind of meal. We can put out different breads or rolls, sliced meats, cheese, lettuce if we have which more times than not we don’t have, tomatoes if my sister is here, pickles and our favorite lunch meat and cheese.
Then we’ll add some easy sides. Chips are always an easy choice because everyone likes them with a couple dips. We could also add fruit and vegetables, if we have company otherwise we will not put those out. Sometimes we put crackers out of we have them or whatever else we already have in the kitchen.
And if we have something sweet, we’ll put that out too. The whole idea is to make lunch without making lunch complicated. Because sometimes we need to give ourselves permission to keep things easy.
We’re getting ready to resume organizing our home this week. That means there are going to be plenty of projects competing for our attention. There will be furniture to move so I can mop the front room because its a hot mess from Gerald dropping food on the floor and not cleaning it up.
There will be things to clean. There will be things that need to be organized. And there will probably be at least a few moments when I wonder why we decided to start another project in the first place!
But Sunday doesn’t have to be the day we do everything. Sunday can be the day we slow down, eat something easy and enjoy being together. Once everyone has made their sandwich, we’re going to settle in for a movie.
There’s something about an easy lunch and a movie that makes an ordinary Sunday feel special. We don’t need to go somewhere expensive. We don’t need a complicated meal. We don’t need a whole afternoon of activities.
Sometimes all we need is a comfortable place to sit, something good to eat and a movie everyone can enjoy. And maybe, just maybe, we can forget about the house and work for a couple of hours.
I wanted to remind you Sunday doesn’t have to be complicated and I think that’s one of the lessons I’m taking into this new week. We’re going to start resetting our home, but we’re also going to remember that our home is where we live.
It doesn’t have to be perfect before we enjoy it. The laundry can wait. The organizing can wait. The next project can wait. Sometimes a simple Sunday lunch is exactly what a family needs before starting a busy new week.
So this Sunday, we’re putting together a sandwich board, choosing a movie and enjoying a little family time. And tomorrow, we’ll start working on that home reset. One room at a time. One project at a time.

- Gather your ingredients. Look through the refrigerator and pantry and use what you already have.
- Prepare the sandwich board. Arrange the meats, cheeses, vegetables, and toppings on a large cutting board, tray, or platter.
- Add the sides. Place chips, fruit, crackers, or vegetables around the sandwiches.
- Let everyone build their own sandwich. Everyone can choose exactly what they want without making several different meals.
- Choose a movie. Once lunch is ready, sit down together and enjoy your movie.
- Don’t worry about making it perfect. The whole point of this Sunday lunch is to keep things simple and enjoy time together.
