For those of you who have been around a while I’m sure you’ve heard me mention my best friend Debbie Finney Sutton. We meet in 2nd grade at Grace E. Hardeman Elementary School. In Middle School she would come over to hang out and my dad would start dinner for everyone. When he was cooking he made sure everyone was helping out.
This is why I wanted to share the sandwich my best friend still talks about—the one my dad taught her to make, along with the hamburger meat he taught her to brown and fried eggs she learned from him and now teaches her daughter because her own mother wouldn’t teach her to cook which is sad.
As we all know, today is Sunday. When Charlie was born, I decided that Sundays would always be family day. Back then, I was blessed because David was working for ATS and he was off on Sundays. He worked a lot of Saturdays, but eventually his schedule changed, and we had that one day where we could slow down, spend time together, and just enjoy being a family.
But life has a way of changing. Jobs change. Now David is at Gate Serv which is part of American Airlines. Schedules change. David is now off on Wednesday’s and Thursday’s if I’m lucky and he doesn’t have to work on those day. Which can be a Godsend at times. Children grow up. Now Charlie is working and he is off on Monday’s and Tuesday’s.
And sometimes the traditions we thought would always look the same become something completely different. Over the years, David’s work schedule has changed many times. There were seasons when he worked nights. There were seasons when his hours changed. Now we are blessed because he works during the day most of the time, whether that is first shift, middle shift, or sometimes evenings.
So Sundays are no longer our family day. And you know what? That is okay. Because when you live with a family, life is never the same forever. It changes on a dime. Instead of Sundays being the day everyone is home, I have learned to make Sundays my day. My day to watch the shows I want to watch. My day to read my book.
My day to wash my hair. My day to sit out on the front porch with our Dogs Bear & Pheobie. My day to rest if that is what I need. Or my dad to get together with my sister and check out events happening around us. Or a day to work on things I missed getting done during the day. More than anything Sunday is my day and that is why we’ve created a new family day.
Wednesday mornings have become our time together. We go out to breakfast or lunch before Charlie heads to work that afternoon. Then after Charlie leaves, David and I run errands and take care of the things we need to do. It may not look like the family days I imagined when Charlie was little. But it is still family. It is just different.
Today my home is quiet. There is no music playing in the background. The television is not on. Normally, I have something playing while I work, but today it is just quiet. As I sit here looking around my room, I find myself thinking about everything we have walked through this week not only as a family but with our extended family and friends as well.
We made it through my dad’s ie David’s dad’s funeral. We are adjusting after losing my father-in-law. Charlie has worked around 60 hours this week while dealing with everything surrounding his grandfather’s funeral. David has worked long hours too. And yet, I am grateful. I am thankful they have jobs.
I am thankful they are working hard. I am thankful that even during difficult seasons, we keep moving forward. I am grateful, thankful, and blessed that the new site is up and running and for everything Renee Davis Brown did to help us get here. I have gotten Charlie off to work. David should be home in the next couple of hours after stopping at the grocery store to pick up eggs, bacon, and bread because he loves me.
And honestly, that is another blessing. When your husband works long hours and still comes home and helps take care of things, that is something worth being thankful for. I have also found myself thinking about my mother-in-law today. I have not heard from her, and I worry. Even though my father-in-law has passed away, I know this is an incredibly difficult season for her.
Grief looks different for everyone. I need to give her grace. But I also know David worries too. Just as Charlie does. So we continue moving forward. One day at a time. One step at a time. And we trust that the Lord is holding us through all of it. Because there are Angels Among Us I am able to put one foot in front of the other and move
Tonight, we are having something simple which is a meal that became a memory or a tradition on the days I feel down. My dad’s fried egg and bacon sandwich. But the truth is, it is never just a sandwich. Food has a way of carrying memories for our families which I am grateful. thankful and blessed for.
These meals reminds us of the people who sat at our tables. The conversations we had. The lessons we learned. The love that was shared. My dad always wanted mustard on his sandwiches. That was just his thing. Charlie has always wanted mayonnaise on his sandwiches. When Suzanne was here, she loved mayonnaise too.
Me? I like to do things a little differently. I add a little bit of mustard because I like the extra kick, but then I add mayonnaise because it helps tone the mustard taste down. You can still taste the mustard, but it gives the sandwich something extra. Because if you know me, you know I have to make things unique and different.
David, of course, does his own thing. He usually skips both mustard and mayonnaise and makes his in a tortilla instead. And that is what makes this recipe special. It is not about making it exactly the same way every time. It is about taking a simple meal and making it something your family enjoys Remember if you don’t like Bacon you can use any meat you prefer including Sausage my favorite or Ham David and Charlie’s favorite. My dad’s but he couldn’t have Ham because of the site and being a Diabetic and having High Blood Pressure..
One of the things I love most about this sandwich is knowing that my dad’s recipes did not stop with our family. My best friend Debbie still talks about the things my dad taught her to make. She learned how to brown hamburger meat and fry eggs from him, and she has now passed those lessons down to her own daughter Karlee.
That is the beautiful thing about cooking. Sometimes we are not just teaching someone how to make a meal. We are sharing a piece of ourselves. My dad taught people he loved. I taught Suzanne and Charlie and David and Debbie taught her daughter and that is how these family recipes continue to make memories we share with our friends and family.
My Dad’s Fried Egg and Bacon Sandwich
This is a simple sandwich, but it is one that can be made a little differently depending on who is sitting at the table.
Ingredients
Bacon or any Meat you want to use
Eggs
Bread or Tortilla
Mayonnaise
Mustard
Salt and pepper, if desired
Directions
Cook your bacon or meat of your choice until it is done the way you like it.
Prepare your eggs however your family enjoys them. I like my Eggs Fried hard for this sandwich but I’ve also done Scrambled Eggs.
Toast your bread if desired.
Spread mayonnaise, mustard, or both on your bread depending on your preference. Or nothing at all if your David.
Add your bacon and egg. I use 2 Eggs. Remember you can never have to much Bacon.
Put your sandwich together and enjoy.
If you prefer, make it in a tortilla like David does.
The best part about this recipe is making it your own.
As I wrap up the afternoon I’m sitting here wondering where my Danielle Steel book Weddings is. Because today would be a perfect day to sit down and read. But you know what? It is all in the Lord’s hands. If I find the book, I find the book. If I do not find the book, I do not. Maybe today I just need to rest.
Maybe I need to climb up on my bed with my dog Pheobie and Charlie’s Dog bear and relax while I wait for David to come home. And that is okay. My house may be a hot mess. But you know what? It is my house. It is where I live. It is where my family has made memories. I am not going to complain. I am going to put one foot in front of the other, just like the little engine who thought he could, and keep moving.Because even in the middle of changes, grief, busy schedules, and ordinary days, there are still blessings everywhere
My Dad’s Fried Egg and Bacon Sandwich
The Sandwich That Became a Family Memory
This simple sandwich carries memories of my dad, my family, and the lessons that are passed down through the years. My dad loved mustard on his sandwiches. Charlie loves mayonnaise. Suzanne loved mayonnaise too. I like to add a little mustard for a kick and mayonnaise to balance the flavor. Everyone makes it a little differently, and that is what makes it special.
Ingredients
Bacon
Eggs
Bread or tortilla
Mayonnaise
Mustard
Salt and pepper, if desired
Directions
Cook bacon until it is prepared the way you enjoy it.
Prepare your eggs however your family likes them. Fried eggs are our favorite, but you can make them your own way.
Spread mayonnaise, mustard, or both on your bread depending on your preference.
Add your bacon and egg, then enjoy your sandwich.
If you prefer, make it in a tortilla like David does.
