I knew as soon as we would reach the letter e in Our Favorite Foods from A to Z Letter E. I would share Eggs which isn’t just for breakfast. I thought I would do Eggs Over Easy or Scrambled Eggs .
Then I thought I would share a recipe for Egg Salad. David loves when we go shopping at Thom Thumb as they have a great Egg Salad you can purchase in the deli.. Do you like Egg Salad? Or are you like me and snack on Boiled Eggs?

Ingredients:
- 8 eggs
- 1/2 cup Kraft Mayo Real Mayo ore Hellman’s Mayo
- 1 teaspoon prepared yellow mustard which I don’t use but David’s mom does
- 1/4 cup chopped green onion I use in mine but not David’s
- salt and pepper to taste
- 1/4 teaspoon paprika which you don’t not have to use
- David’s mom used Relish to taste in her Egg Salad in place of Pickles which I don’t use.
- Place egg in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.
- Place the chopped Eggs in a bowl, and stir in the Mayonnaise, Mustard and green Onion. Season with salt, pepper and Paprika. Stir and serve on your favorite bread or crackers.
