Day 3: Freezer Breakfast Burritos: A Helping Hand on Busy Mornings
Good morning, family & friends, and welcome back to Greatful Moments! I am so happy you took the time to stop by. I am continuing our 13 Days to the First Day of School Breakfast Countdown, and today I’m sharing a breakfast idea that is all about making busy mornings a little easier. Before we get started, I want to share something with you.
if you’ve been here a while you know my son Charlie has already graduated from high school, so I am no longer standing in the kitchen trying to get a child out the door with a backpack and a school schedule in hand. While reminding him he needs to eat. But that does not mean I do not love sharing these kinds of ideas with you.
I still have nieces and nephews who are heading back to school, and I know how busy those mornings can be for families. Plus, these freezer breakfast burritos are not just for school mornings. They would make a wonderful breakfast addition for David and Charlie as they rush out the door to work in the morning. Having something homemade and ready to grab can make a busy morning feel a little easier.
That is what I love about recipes like this. They can be made ahead, customized for your family, and shared with the people you love. I can even imagine making a package of these breakfast burritos, wrapping them up, and dropping them off for my nieces and nephews as a little “Welcome to the First Day of School” surprise.
Because sometimes a homemade breakfast is more than food. Sometimes it is a reminder that someone is thinking about you. And that is what Greatful Moments is all about. When creating this breakfast treat make a package for the school staff as well as your neighbors who also may be rushing to get things done.
One of the best things about freezer breakfast burritos is that there is no single “right” way to make them. Every family has different tastes, and you can create these burritos to fit the people sitting around your table. For my family that is a Godsend and they are easy enough even small children can help assemble them. If your #Homeschooling let your students make them as part of a cooking class.
You can add:
Protein Options
- Bacon
- Sausage
- Ham
- Or leave the meat out completely
Egg Options
- Scrambled eggs
Cheese Options
- Add your favorite shredded cheese we use Store brand Cheese and switch up what flavor or Cheese depending on whose eating
- Leave cheese out if your family prefers which I do.
Vegetable Options
- Diced potatoes
- Onions
- Peppers
- Or keep them simple
As you know in my home you wouldn’t find Vegetables in our Burrito’s but you might find Potato’s. The fun part is making them your way.
Busy mornings happen and sometimes everyone is running late. Sometimes the alarm does not go off. Sometimes you simply need a little extra help getting the day started. Having breakfast already prepared can take one more thing off your morning list. Make a batch when you have time, wrap them individually, and store them in the freezer. Then you can pull out only what you need. A homemade breakfast waiting in the freezer is like giving your future self a little gift.

To make freezer breakfast burritos, these tools can make preparation easier:
- Large skillet
- Mixing bowls
- Spatula
- Measuring cups and spoons
- Tortilla warmer (optional)
- Aluminum foil or freezer paper
- Freezer-safe storage bags or containers
- Labels or markers for writing dates and fillings
Freezer Breakfast Burritos
Freezer Breakfast Burritos
Makes: 10 burritos
Ingredients
- 10 large flour tortillas
- 10 eggs, scrambled
- 1 pound breakfast sausage, cooked and crumbled
(or substitute bacon, ham, or leave meat out) - 2 cups shredded cheese (optional)
- 2 cups cooked diced potatoes (optional)
- 1/2 cup diced onions (optional)
- 1/2 cup diced bell peppers (optional)
- Salt and pepper to taste
Directions
- Cook your chosen meat, if using, and set aside.
- Scramble eggs and season with salt and pepper.
- Prepare potatoes, onions, and peppers if adding them.
- Warm tortillas slightly so they are easier to roll.
- Add eggs and your chosen fillings to each tortilla.
- Fold the sides in and roll tightly.
- Wrap each burrito individually in foil or freezer paper.
- Place in a freezer-safe bag or container.
To Reheat
- Microwave: Remove wrapping and heat until warmed through.
- Oven: Warm wrapped burritos at 350°F until heated.
Make It Your Way
Bacon, sausage, ham, cheese, potatoes, onions, and peppers are all optional. The best breakfast burrito is the one your family will enjoy.
Memory Maker of the Day
Create a “Welcome to the School Year” breakfast surprise. Make a few extra burritos, wrap them individually, and add a handwritten note: “Wishing you a wonderful school year! You are loved and prayed for.” A small act of kindness can become a memory someone carries with them.

Ingredients
Choose Your Favorites:
- Large flour tortillas
- Scrambled eggs
- Bacon, sausage, ham, or no meat
- Shredded cheese (optional)
- Diced potatoes (optional)
- Onions (optional)
- Bell peppers (optional)
- Salt and pepper to taste
Directions
Prepare your chosen fillings and cook until heated through.
Place fillings in the center of a tortilla. Fold in the sides and roll tightly into a burrito.
Wrap each burrito individually with foil, parchment paper, or freezer paper.
Place wrapped burritos into a freezer-safe bag or container.
Freezer Tip
Make a batch ahead of time and freeze for busy mornings. Remove only what you need and warm before serving.
