Food Holidays: May 5th, 2022

Good morning how are you. It’s funny that yesterday Charlie let me know he wanted to have lunch at Panchos and order Rice and Beans with Cheese Enchilada when today is National Enchilada Day and I wouldn’t mind having Beef Enchilada’s. I wonder if when I get to Oklahoma I could talk my brother into getting Mexican Food for dinner and before you ask no, they do not have Pancho’s in Oklahoma which stinks.

National Enchilada Day – Happy Cinco de Mayo!

Five facts about Enchiladas:

  • Enchilada is one of the recipes mentioned in Mexico’s first cookbook in 1831.
  • Enchilada is the past participle of Spanish enchilar, “to add Chile Pepper to”, literally to “Season or decorate with Chile.”
  • Enchiladas originated in Mexico, where the practice of rolling Tortillas around food dates back at least to Mayan times.
  • Writing at the time of the Spanish Conquistadors, Bernal Díaz del Castillo documented a feast enjoyed by Europeans hosted by Hernán Cortés in Coyoacán, which included foods prepared in Corn Tortillas.
  • In the 19th Century, as Mexican Cuisine was being memorialized, Enchiladas were mentioned in the first Mexican cookbook, El Cocinero Mexicano (“The Mexican Chef”), published in 1831. Then in Mariano Galvan Rivera’s Diccionario de Cocina, published in 1845.
