Garlic Roasted Acorn Squash

I have been trying to eat healthier but getting David and Charlie to with me it’s like pulling teeth I’m hoping Charlie and David will try Garlic Roasted Acorn Squash .

Garlic Roasted Acorn Squash

Acorn squash roasted with garlic and seasoningsJeanette Kimszal: JeanetteRecipe type: Side DishServes: 4Ingredients

  • 1 acorn squash
  • 1 clove garlic chopped
  • 1 tbsp cold or expeller pressed Extra Virgin Olive Oil (EVOO) (I like California Olive Rancher)
  • 1 tsp basil
  • 1 tsp cumin

Instructions

  1. Pre-heat the oven to 375 degrees Fahrenheit
  2. With a strong sturdy knife cut acorn squash into quarters
  3. Scoop out the seeds with an ice cream scoop or teaspoon
  4. Place the acorn squash pieces on a baking sheet
  5. Drizzle the olive oil on the squash
  6. Place the garlic, basil, and cumin on the squash pieces
  7. Cook in the oven for 40-45 minutes or until soft
  8. Serve
