Even though Charlier has graduated I have nieces and nephews going back to school this week. I remember trying to get everyone out the door in the morning, sometimes the best breakfast was the one that doesn’t require a lot of work. Which is why I love about breakfast. For Day 7 of our 13 Days to the First Day of School Breakfast Countdown, we’re making Cheesy Breakfast Toast.
I remember we would have this in school sometimes. It’s one of those breakfasts you can change depending on what your family likes and what you already have in the refrigerator. Which is a Godsend when trying to get everyone where they need to be. Even though Charlie isn’t going back to school this year, breakfast doesn’t stop being important just because the school years change.
Now these are the kinds of breakfasts that can work before work, before an early appointment, or anytime you need something quick and filling. And the best part is that everyone can make theirs a little differently. For the basic recipe, you’ll need bread, eggs, shredded cheese, butter or cooking spray, and a little salt and pepper. You can also add cooked bacon, sausage, ham, or whatever leftover meat you have in the refrigerator.
Recipe for Cheesy Toast
Start by toasting your bread until it’s lightly golden. You want it toasted enough to hold the toppings but not so hard that it’s difficult to eat. While the bread is toasting, scramble your eggs in a skillet with a little butter or cooking spray. Season them with salt and pepper and cook them until they’re just set. Once the toast is ready, place the scrambled eggs on top and sprinkle with shredded cheese. You can put the toast under the broiler for a minute or two until the cheese melts, or simply place the cheese on the hot eggs and let it melt naturally.
If your family likes meat with breakfast, add some cooked bacon, sausage, or ham before putting the cheese on top. And this is where I think this breakfast gets fun. One person can have scrambled eggs and cheese. Someone else can add bacon. Someone can leave off the cheese. Someone else might want extra cheese. You can even add a little salsa or hot sauce if that’s something your family enjoys. There isn’t really a wrong way to make it.
Make Breakfast Easier
If you know your mornings are going to be busy, cook your breakfast meat ahead of time. You can cook bacon or sausage on the weekend and keep it refrigerated so it’s ready to go during the week. Then breakfast becomes a matter of making some toast, scrambling an egg, adding your meat and cheese, and you’re ready to eat.
That’s much easier than trying to figure out breakfast when everyone is already asking how long until you have to leave. And if you’re making this for children, you can cut the toast into smaller pieces once it has cooled enough to handle. It can become a simple breakfast they can eat at the table before school or take along for the morning if your family’s schedule allows.
Why I Like This Breakfast
I like recipes like this because they don’t require a special ingredient list. You probably already have most of what you need. Bread. Eggs if you want them. Cheese. And whatever breakfast meat happens to be in your refrigerator. That’s the kind of breakfast that makes sense during a busy week for busy families.
We’re counting down to the first day of school, but we’re really counting down to those mornings when everybody is trying to get dressed, find their shoes, remember their backpack, grab their lunch, and somehow still eat breakfast. A recipe doesn’t have to be fancy to help. Sometimes a piece of toast with eggs and melted cheese is exactly what everybody needs.
And if you have a picky eater in the family, this is easy enough to change without having to cook an entirely different breakfast. Make it cheesy. Make it simple. Add bacon. Leave off the meat. Add sausage. Skip the cheese. Let everybody make it their own. That’s how you make breakfast work for a family.
Cheesy Breakfast Toast
For each serving, you’ll need one slice of bread of your choice, I like White Bread or Light Bread as we call it and the Store Brand is fine, one egg, about ¼ cup of shredded cheese, a small amount of butter or cooking spray, and salt and pepper to taste. Add cooked bacon, sausage, or ham if desired.
Toast the bread until lightly golden. Scramble the egg in a skillet with butter or cooking spray, seasoning it with salt and pepper. Once the egg is cooked, spoon it over the toast and sprinkle with cheese. Add any cooked breakfast meat you’re using. Place under the broiler briefly until the cheese melts, or allow the heat from the eggs to melt the cheese. Serve warm and enjoy.
For a family breakfast, simply multiply the ingredients by the number of people you’re feeding. And remember, this isn’t a recipe where everyone has to eat the exact same thing. That’s the whole point. Make breakfast the way your family likes it. Tomorrow we’ll continue our countdown with another breakfast idea as we get one day closer to the first day of school.
