It’s hard to believe we are on Day 5 of our 13 Days to the First Day of School Breakfast Countdown, and today we’re making something that can save a little time on those crazy school mornings: Freezer Breakfast Sandwiches. I might be the only person who isn’t to crazy about Breakfast Sandwiches but once in a while I will eat them as long as there is no, cheese on them. As for David and Charlie they love Breakfast Sandwiches. What about you?
This is one of those breakfasts I love creating for David and Charlie to have before work but they also make a fun back-to-school breakfast meal because you can make several at once, put them in the freezer, and have breakfast ready to grab when everybody is trying to get out the door. And that’s exactly what we’re trying to do with this countdown. We’re not just talking about breakfast. We’re getting breakfast ready.
Easy Freezer Breakfast Sandwiches
What You’ll Need
English muffins, biscuits, or bagels I would use a Croissant for me
Eggs
Breakfast sausage, bacon, or ham Sausage for me
Sliced cheese No, Cheese for me
Salt and pepper
A little butter or cooking spray
You can adjust the ingredients depending on what your family likes. If somebody doesn’t eat sausage, use bacon. If somebody doesn’t like eggs, make theirs without them. That’s one of the nice things about making these yourself. For me my sandwich wouldn’t have Cheese but David and Charlie’s would.
How to Make Them
Start by cooking the breakfast breakfast meat of your choice.
While that’s cooking, prepare your eggs. I like mine Fried Hard but you can have your eggs any way you like.
You can scramble the eggs and cook them in a skillet, or bake a large batch of eggs in a baking dish and cut them into portions. Baking the eggs can make this especially easy when you’re making several sandwiches at once. Before you ask I’ve never baked eggs but I can’t wait to try them.
Toast your English muffins, biscuits, or bagels lightly for me its a croissant.
Then assemble each sandwich with your egg, meat, and cheese just remember no, cheese for me.
Let the sandwiches cool completely before wrapping them individually.
Wrap each sandwich in foil or freezer-safe wrapping and place them in a freezer bag or container with a napkin.
Don’t forget to label the bag with the date.
Now you have breakfast waiting in the freezer.
On a School Morning
Take one sandwich out of the freezer for everyone but for someone like Charlie and David you might need 2 or 3 sandwiches per person and remove the foil before reheating.
You can warm the Breakfast Sandwich in the microwave according to your microwave’s instructions, or thaw it in the refrigerator overnight and reheat it in the morning.
Add a piece of fruit, which my I don’t eat and Charlie might or might not eat it but David would and you’ve got a simple breakfast that can go from freezer to breakfast table without a lot of work.
And if your child needs to eat breakfast on the way out the door, you can wrap the reheated sandwich in a paper towel or napkin for an easy grab-and-go breakfast. Saving time and money.
Make It Your Own
The best part about these breakfast sandwiches is that you don’t have to make every one exactly the same.
Try:
Sausage + Egg + Cheese
Bacon + Egg + Cheese
Ham + Egg + Cheese
Or make a meatless version with egg and cheese.
Or leave the Cheese off
You could even use different breads so everyone gets a sandwich they actually enjoy. If you’re preparing these before school starts, let the kids help choose their combinations. Then everybody knows what is waiting in the freezer.
Today’s Back-to-School Breakfast Challenge
Today, make a batch of freezer breakfast sandwiches. You don’t have to make enough for the entire school year. Even six sandwiches can give you six easier school mornings. That’s six mornings when you don’t have to stand in the kitchen wondering what everyone is going to eat. And that’s what this countdown is all about. We’re getting ready now so those first school mornings don’t feel quite so overwhelming.

Freezer Breakfast Sandwiches
A Make-Ahead Breakfast for Busy School Mornings
Ingredients
- 6 English muffins, biscuits, or bagels
- 6 large eggs
- 6 slices cheese
- 6 portions breakfast sausage, bacon, or ham
- 1 tablespoon butter or cooking spray
- Salt and pepper, to taste
Directions
- Cook the breakfast sausage, bacon, or ham according to package directions. Set aside.
- Whisk the eggs together with a little salt and pepper.
- Cook the eggs in a skillet until set. For a larger batch, eggs can also be baked in a greased baking dish and cut into portions.
- Lightly toast the English muffins, biscuits, or bagels.
- Assemble each sandwich with one portion of egg, breakfast meat, and cheese.
- Allow the sandwiches to cool completely.
- Wrap each sandwich individually in foil or freezer-safe wrapping.
- Place the wrapped sandwiches in a freezer bag or freezer-safe container. Label with the date.
To Reheat
Remove the foil or freezer wrapping. Reheat according to your microwave’s instructions until heated through. For best results, thaw overnight in the refrigerator before reheating.
