Bittersweet Chocolate Brownie Bites

Ingredients

  • Bittersweet chocolate (60–70%), chopped — 8 oz
  • Unsalted butter — ½ cup
  • Granulated sugar — ¾ cup
  • Brown sugar — ¼ cup
  • Large eggs — 2
  • Vanilla extract — 1 tsp
  • All‑purpose flour — ½ cup
  • Cocoa powder — 2 tbsp
  • Salt — ¼ tsp
  • Optional mix‑ins: mini chocolate chips, chopped nuts, or crushed toffee

Instructions

  • Melt the chocolate and butter together in a microwave or double boiler until smooth.
  • Whisk in both sugars while the mixture is still warm.
  • Add eggs and vanilla, mixing until glossy.
  • Fold in flour, cocoa, and salt just until combined.
  • Scoop into mini muffin tins (greased or lined).
  • Bake at 350°F for 10–12 minutes, until the tops are set but the centers stay soft.
  • Cool slightly before removing — they firm up as they rest.
